Welcome to our first quarterly edition of 'Quick+ Easy Seafood'. Seafood is fabulous all year round and winter especially brings with it an abundant variety of seafood to choose from. As always, because seafood cooks quickly, you can create a delicious meal in a short time. Don't think that seafood isn't hearty in winter. Warm up with one of my winter recipes.

I welcome the opportunity to inspire and instil confidence that allows people to express their creativity in cooking. My aim is to encourage you to be adventurous with our fantastic Australian seafood and to try all the recipes in this edition. If some of the methods appear slightly long, it is because I've included information like 'how to peel a tomato' and 'which part of the leek to use'. So please don't be put off - have some fun!
